What's the difference between piglatin and latin?

Dear YOU went boneless,

The difference is that Latin is a root for a lot of languages, but is now somewhat dead; and piglatin is a code where you take the first letter of a word that starts with a consonant and move it to the back with an -ay at the end.

Ex:

Piglatin -> iglatinay

Eggplant -> eggplantay
